Cauliflower Recipe A Delicious, Healthy Substitute For “Fried Rice”

Looking for a “fried rice” dish without the rice? Here’s a super healthy recipe where cauliflower replaces rice (and the carbs) for a tasty, vegetarian dish.

For this recipe you’ll need the following ingredients:

– Cauliflower
– Sesame oil
– White onion (chopped)
– Frozen peas and carrots
– 2 eggs (beaten)
– Soy sauce

Chop some cauliflower florets and pulse them in a food processor until it is minced. Preheat a large skillet to medium heat and add a bit of sesame oil. Add chopped onions, peas and carrots and stir until tender. Move the vegetables to the side of the pan and scramble the eggs until they are fully cooked. Next mix the eggs, veggies together and add the minced cauliflower with a bit of soy sauce. Stir it until it is fully cooked.
