How To Make Mexican Grilled Corn ‘Elote’ With Chili Lime Mayo and Cheese

When summers wind down, there’s nothing I enjoy more than fresh corn on the cob. And if you’re like me, I’m always looking for a different way to enjoy it. Food Wishes’ Chef John, loves sharing videos of easy to make, tasty recipes and in this food video he shares his easy Mexican Grilled Corn recipe.

He writes on AllRecipes that it’s his all-time favorite. “I consider this to be the greatest corn-on-the-cob recipe of all time,” he says. “The way the mild, subtly salted cheese works with an ancho-lime mayonnaise, along with that buttery, smoky corn, is a magnificent combination of flavors. Perfecto!”

The corn will be covered in a smokey, spicy mayonnaise with a limey zest, then grilled and finally covered with Cotija cheese!

For this recipe you will need:

  • Mayonnaise
  • 2 Limes (one sliced, one juiced)
  • Ancho Chile pepper
  • Smoked paprika
  • Corn on the cob
  • Butter
  • Cotija cheese (parmesan or feta can substitute)
  • Pinch of salt
